Keto Pound Cake
I got this keto pound cake recipe from the book Keto Desserts. I highly recommend getting a copy for yourself if you want to be able to try a variety of cakes, cookies, ice cream and other desserts that are all delicious and satisfying, while also being keto friendly.
Ingredients
Dry Ingredients 1 1/2 cups of almond flour (150 g) 2 scoops of vanilla whey protein powder 1/2 cup erythritol, powdered 3/4 teaspoon baking powder 1/4 teaspoons sea salt | Wet Ingredients 3 large eggs 6 tablespoons butter or virgin coconut oil (melted) 1/4 cup coconut milk 1/2 tablespoon vanilla extract 40 drops liquid Stevia |
Substitutions
When I made this recipe I didn’t have any vanilla flavored protein powder so I just used whatever protein powder I had and I increased the amount of vanilla extract I added.
I also did not have any coconut milk so I just used a quarter cup of half-and-half instead. With the substitutions, the recipe still came out tasting great. You would be hard-pressed to tell the difference between this low-carb, keto pound cake and a traditional pound cake made with sugar and white flour.
Directions
1. Grease a 9 x 5″ loaf pan and line the loaf pan with parchment paper.
2. Preheat oven to 350°F
3. In a medium bowl, whisk together the almond flour, erythritol, protein powder, baking powder and salt.
4. In another bowl, mix the eggs, melted oil or butter, coconut milk, vanilla extract, and liquid Stevia.
5. Add the dry ingredients to the wet ingredients and blend thoroughly.
6. Pour the batter into your loaf pan and bake for 40 to 45 min.
