Keto Butter Cookies

I found this keto butter cookie recipe on the “Savory Tooth” website. There are a lot of great recipes there. To make these cookies you only need 4 ingredients. They’re simple to make and they are fantastic. This is one of my go-to recipes when I want a sweet treat.

Ingredients

1 Cup Blanched Almond Flour3 tbsp Butter
1/4 Cup Powdered Erythritol1/2 tsp Vanilla Extract

Instructions

1. Preheat oven to 350°F
2. Prepare a cookie sheet by greasing with butter, spraying with cooking spray, or lining with parchment paper.
4. In mixing bowl, combine all of the ingredients and mix thoroughly. The dough will be crumbly at first, but it will form a nice dough with enough mixing.
5. Pull off a piece of the dough to form a ball about 1 inch in diameter. Spacing each dough ball about 2 inches apart, repeat until all of the dough has been used. You will get approx. 10 cookies.
6. Flatten each dough ball, either with a fork or with your hands.
7. Bake for about 10 minutes.

You’ll know the cookies are done when they start to turn golden brown on the edges. The cookies will be very delicate at first, so let them cool on the cookie sheet. They also taste best once they have fully cooled, so be patient and don’t eat them too soon.

In the video above, I double the recipe because 10 cookies just aren’t enough and won’t last long in my house.
