Keto pigs in a blanket.

The keto pigs in a blanket recipe is simply hot dogs wrapped in dough and then baked in the oven. The dough that we are going to use is the same fathead dough that we used to make Keto pizza in another blog post.

Ingredients

6 ounces mozzarella cheese
1 ounce cream cheese
3/4 cup blanched almond flour
1 large egg
1 teaspoon Italian seasoning
1 teaspoon garlic powder

Directions

1. Preheat oven to 400°F or about 204°C.

2. While the oven is heating up, put 6 ounces or about 170 grams of grated mozzarella cheese into a bowl along with 1 ounce or about 28 grams of cream cheese and 3/4 of a cup of almond flour. Microwave on high for about 1 min. then stir it up and pop it back in for another 30 seconds.

3. Add the egg and the seasonings and mix thoroughly until everything is combined.

4. Take a piece of dough a little larger than a golf ball, Put it between two pieces of parchment paper, and roll it thin. If you have a tortilla press, you can use that. You can also simply push down on the dough with a heavy pan to flatten it.

5. Take a hot dog and roll it up in the dough. Then place your pig in a blanket onto a cookie sheet. Repeat this until you have used all of the dough.

6. Bake your pigs in a blanket for about 20 min. or until they start to turn golden brown.
