Keto Chocolate Mug Cake Recipe

I’ve tried a number of different keto chocolate mug cake recipes and so far, this one is my favorite. It only uses a few ingredients and it’s quick and easy to make. Prep time and cook time, even with a slow microwave like mine, can be less than 5 min.

If you ask me, this recipe results in a cake that tastes pretty darn close to an actual cake made with sugar and white flour. This one tastes the same but is actually healthy. Yes, you can actually lose weight while still indulging in a scrumptious chocolate cake.

Ingredients

1 tablespoon of butter melted
1 tablespoon of coconut flour (or 3 tablespoons of almond flour)
2 tablespoons granulated sweetener (erythritol, monk fruit, etc.)
1 tablespoon cocoa powder
1/2 teaspoon baking powder
1 egg, beaten
1 tablespoon sugar-free chocolate chips (optional)

Instructions

1. In a coffee mug, ramekin, or small glass bowl, melt the butter in the microwave for 10 to 30 seconds.

2. Add coconut flour, sweetener, cocoa powder, baking powder, the beaten egg and mix well.

3. Microwave on high for 1 min. to 1 min. 45 seconds. (A lot of mug cake recipes say to cook it in the microwave for 1 min., but my microwave takes a little longer and 1 min. 45 seconds is just right. Your results may vary so experiment a little with your microwave.)
