Keto Chocolate Chip Cookies

Chocolate chip cookies are my absolute favorite treat. In fact, if I’m being honest I would say that I am addicted to them. But on a keto or low-carb diet, you have to make some sacrifices and give up some of your favorite foods. Nonsense!

I got this keto chocolate chip cookie recipe from the book Keto Desserts Your Guide to Keto Baking. It’s easy to make and it results in some very tasty chocolate chip cookies that are a little bit crispy on the outside while also being moist and tender on the inside. They’re not exactly like the chocolate chip cookies I used to make before getting on a low-carb diet, but they’re pretty darn good.

Ingredients

* 1 1/4 cups blanched almond flour (125 g)
* 1 1/2 tablespoons coconut flour (10 g)
* 1 1/2 teaspoons baking powder
* 1/4 teaspoon sea salt
* 3 teaspoons beef gelatin
* 1/2 cup erythritol (100 g)
* 6 tablespoons room temperature butter
* 1 large egg
* 1 teaspoon vanilla extract
* 30 drops liquid Stevia
* 2 ounces Lily’s Dark Chocolate Chips

Directions

1. In a small bowl, whisk the almond flour, coconut flour, baking powder, sea salt, and gelatin.

2. In a medium bowl, mix room temperature butter and erythritol until combined. Next, add the egg, vanilla, and Stevia and mix again.

3. Add the dry ingredients to the wet ingredients and mix to combine. Then, stir in the chocolate chips.

4. Place the dough in the freezer for about 10 min. to chill.

5. Preheat your oven to 350°F and line a cookie sheet with a piece of unbleached parchment paper.

6. Scoop the dough, approximately 1 tablespoon at a time, and place little balls onto the cookie sheet approximately 2 inches apart from each other. Then, flatten each dough ball a little.

7. Place the cookie sheet in the oven for 14 to 16 min. or until your cookies start to turn a golden color.

8. Remove cookies from the oven and place them on a wire rack to cool. The cookies taste best when they have cooled completely.
